Octane Rating matters?

Hi guys, I got a question on octane rating.

So according to the manual the minimum recommended is 87, previous owner of my bike said he only ever used 91. So I'm trying to understand why this is important.

My question is, does it really matter? What are the long term effects using lower rated fuel can have?

Feel free to add anything else you think i should know!

In the past I would have said if the manual says to use 87 then use 87.

But now with the addition of ethanol to all 87 octane fuel I would have to say use 91 only.

Especially if the bike may sit for awhile.

My car says to use 87 but I use 91 now to avoid the ethanol.
